- ⅔ cup sugar
- ⅓ cup all-purpose flour
- ¼ tsp ground cinnamon
- 6 cups fresh peaches*
- 1 tsp lemon juice
- 1 tbsp butter*
* substitutions
- 6 cups frozen and sliced peaches, partially thawed and drained.
- spreads with at least 65% vegetable oil can be substituted
Heat oven to 425°
Mix sugar, flour and cinnamon in large bowl. Stir in peaches and lemon juice. Turn into pastry-lined pie dish. Dot with butter. Cover with top pastry that has slits cut in it, seal and flute. Cover edge with a pie crust saver or 2-3" wide strip of foil to prevent excessive browning. Remove during the last 15 minutes of baking.
Bake about 45 minutes or until crust is brown and juice begins to bubble through the slits in crust. Cool in pie dish on wire rack. Serve warm if desired. Add ice cream for a more diverse dessert.
